He will ensure attendance of butchers on daily basis.  He will ensure pre & post request checklist before & after debone operation.  He will ensure the issuance of carcass from inventory team, quartering of half carcass as per requirement and de-boning activity on the semi auto-mate bone puller. He will ensure the production of trimming and articles as per customer requirement and the trimming, fats, bones, are properly collected and disposed of.  He will coordinate with quality control and dispatch team for the support of operations.  Will ensure personal hygiene, butchers hygiene and personal safety equipment.  Reporting to deputy manager operation regarding compliance & noncompliance.

Taking handing over as per hot weight and segregate the product as per requirement. To monitor all packing activities as per standard. Ensure proper loading of pieces/boxes for reefer truck for airport / sea port as per standard.  Ensure dispatch of reefer truck/container according with packing list. Inform to QA/QC department in case of any clarification. Prepare the dispatch slip on every dispatch & hand over the one copy to logistic department. To pack the meat count wise (Local & Export wise). To check the individual bags/carton weight according to standards. Coordinate with SCM department to intimate the quarantine requirement & dispatch slip. Coordinate with SCM department for flight timing & vehicle arrangements accordingly.  Prepare duty roster of all dispatch department & Submit daily attendance sheet to concerned department. Ensure proper record of issuance & consumption of all packing materials. Maintain the minimum stock level of all packing related materials.  Prepare necessary arrangement in case of any return. Make daily activity plan & share with concern departments Product Temperature Monitoring at time of dispatch and after slaughtering Monitoring of blast packing according to customer specification. Monitoring Blast temperature to maintain the product quality. Before starting blast and dispatch operation insuring the Safety of blast and dispatch team. On daily basis Preparing Dispatch related reports. Maintaining all dispatch document for audit purpose. Compilation of Monthly Dispatch Summary and share with all stock holders. Inspecting the Blast Cold Store and chillers to maintain the product quality.

Requirements: Experience in meat processing and vacuum packing, with supervisory experience preferred.  Strong knowledge of food safety and hygiene standards.  Ability to manage a team and optimize production processes.  Comfortable working in a cold storage environment.
